Blue Spirulina Lemonade: How to Keep the Colour Bright

The secret to blue spirulina lemonade is to mix the blue and the lemon separately, then combine them slowly. Lemon is acidic, and phycocyanin—the blue pigment—can shift, fade, or precipitate when acidity, heat, light, and time work against it.

You can still make a striking drink. Treat the colour as a small kitchen experiment rather than dumping powder straight into a sour pitcher.

Bright blue lemonade for four

  • 3 cups cold water
  • 1/3 cup fresh lemon juice, plus more to taste
  • 2 to 3 tablespoons maple syrup or simple syrup
  • AimGrow 100% Pure Blue Spirulina, starting with a tiny amount within the current label directions
  • Ice, lemon wheels, and mint

In a pitcher, combine water, lemon juice, and sweetener. In a small glass, whisk blue spirulina with two tablespoons of cool water until smooth. Pour the blue mixture into the pale lemonade a little at a time while stirring. Stop when you like the shade.

Why the blue can turn dull

Blue spirulina is a phycocyanin-rich extract, not the same as whole green spirulina. A scientific review found that phycocyanin is sensitive to pH, temperature, and light, with better stability around pH 5.5 to 6 and below about 45°C in the dark.

Lemonade can be much more acidic than that ideal range. The exact result depends on the recipe, product, concentration, and time. A drink that looks electric blue at first may become turquoise, purple-blue, greenish, or pale.

Five ways to preserve more colour

  1. Use cold or room-temperature liquid.
  2. Make the lemonade pale before adding blue.
  3. Add lemon gradually instead of all at once.
  4. Serve soon after mixing.
  5. Keep the pitcher out of strong sunlight.

How to fix a batch

If the drink turns too green, dilute it with more cold water and a little sweetener, then add a fresh blue-water concentrate. If it is too dark, add more lemonade rather than more acid. If powder floats, whisk it in a separate small glass before returning it to the pitcher.

Do not boil the colour into a hot syrup. Make simple syrup first, cool it fully, and then add the blue component.

Make a layered party version

Fill clear glasses with ice and pale lemonade. Add a small stream of concentrated blue mixture down the side immediately before serving, then give each glass one gentle stir. The result creates blue gradients without leaving dry powder on the surface.

For a less acidic mocktail, use chilled sparkling water, a little simple syrup, cucumber, and mint, with lemon served as an optional garnish. Carbonation can make vigorous stirring messy, so mix the blue concentrate into a small amount of still water first. Keep the finished pitcher cold and treat it like any fresh drink containing cut fruit.

Frequently asked questions

How much blue spirulina should I use?

Start with a tiny amount and follow the product label. Colour intensity builds quickly, and more powder is not automatically better.

Why did my lemonade turn purple?

Acid changes the pigment environment, and other ingredients can shift the visible shade. It is a colour reaction, not proof the product is unsafe.

Can I make it a day ahead?

You can refrigerate it, but the colour may fade or separate. For the brightest presentation, mix the blue close to serving.

Use AimGrow Blue Spirulina as a colour ingredient you can control: cool liquid, slow mixing, and a quick trip to the table.
